Mixed Millet Dosai & Sambar

Dosa made using millets that are rich in fibre, calcium, iron and vitamin B.

Ingredients

  • Varagu – 1 cup
  • Samai – 1 cup
  • Kuthiravali – 1 cup
  • Thinai – 1 cup
  • Cholam – 1 cup
  • Urad dal – 1.1/4 cup
  • Fenugeek – 1 tbsp
  • Salt to taste
  • Water as needed

Steps

  1. Mix all the millets into a bowl, wash and soak for 8 hours
  2. Mix the Urad and Fenugreek, wash and soak
  3. Drain the water, and first add Uredo and Fenugreek to the grinder
  4. Grind for ~30 min., use water as needed during the process, and once done keep the batter aside
  5. Grind the millets for ~30 min. use water as needed during the process, and once done mix both the batter together along with salt
  6. Cover it and ferment it for 6-8 hours
  7. Once fermented, mix the batter thoroughly
  8. Pour it in to hot tawa, drizzle oil, and roast it well
  9. Serve it hot with sambar and any spicy chutney.
