Multi Millet Idli is a nutrition packed idli recipe.

Ingredients

  • Thinai - 1 cup Kodo Varagu - 1 cup Kudiraivali - 1 cup
  • Samai - 1 cup Pearl Kambu - 1 cup
  • Urad dal -1.1/4 cups
  • Vendhayam: 2 tsp
  • Salt: 5 tsp
    Note: You may add any other millets as well

Steps

  1. Mix all the millets into a bowl, wash and soak for 4-5 hours
  2. Mix the Urad and Fenugreek, wash and soak
  3. Drain the water, and first add Uredo and Fenugreek to the mixer/grinder
  4. Grind for ~30 min., use water as needed during the process, and once done keep the batter aside
  5. Grind the millets for ~30 min. use water as needed during the process, and once done mix both the batter together along with salt
  6. Cover it and ferment it for 6-8 hours
  7. Once fermented, mix the batter thoroughly, pour it in to the greased Idli plates
  8. Steam cook the Idlis for approx. 12 minutes
  9. Serve it hot with any spicy chutney.
