Mappillai Samba Idli
Idli made using Mappillai samba rice, which is a traditional and native rice of Tamil Nadu, India
Ingredients
- Mappillai Samba Rice - 400 grams
- Urad Dal - 150 grams
- Fenugreek - 1 tbsp.
- Salt to taste
- Water as needed
Steps
- Wash Mappillai Samba rice and soak for 4-5 hours
- Mix the Urad and Fenugreek, wash and soak
- Drain the water, and first add Urad Dal and Fenugreek to the mixer/grinder
- Grind them and use water as needed during the process, and once done keep the batter aside
- Grind the Mappillai Samba rice. Use water as needed during the process, and once done mix both the batter together along with salt
- Cover it and ferment it for 6-8 hours
- Once fermented, mix the batter thoroughly, pour it in to the greased Idli plates
- Steam cook the Idlis for approx. 10 minutes
- Serve it hot with any spicy chutney.
