Idli made using Mappillai samba rice, which is a traditional and native rice of Tamil Nadu, India

Ingredients

  • Mappillai Samba Rice - 400 grams
  • Urad Dal - 150 grams
  • Fenugreek - 1 tbsp.
  • Salt to taste
  • Water as needed

Steps

  1. Wash Mappillai Samba rice and soak for 4-5 hours
  2. Mix the Urad and Fenugreek, wash and soak
  3. Drain the water, and first add Urad Dal and Fenugreek to the mixer/grinder
  4. Grind them and use water as needed during the process, and once done keep the batter aside
  5. Grind the Mappillai Samba rice. Use water as needed during the process, and once done mix both the batter together along with salt
  6. Cover it and ferment it for 6-8 hours
  7. Once fermented, mix the batter thoroughly, pour it in to the greased Idli plates
  8. Steam cook the Idlis for approx. 10 minutes
  9. Serve it hot with any spicy chutney.
