Story/Overview

Black rice, also called forbidden rice or "emperor's rice," is gaining popularity for its high levels of antioxidants and superior nutritional value. Forbidden rice earned its name because it was once reserved for the emperor to ensure his health and longevity, and forbidden to anyone else. It is mainly grown in the North East region (called as Chak Hao) and the southern parts (called as Kavuni in Tamil) of India.

How to Cook:
Need soaking time 6-8 hours before using it. Not suitable for lunch. You can prepare Sweet pongal, Dosa, Idly, Paniyaaram, Puttu

Recipe:
KARUPPU KAVUNI RICE SWEET PONGAL
INGREDIENTS:

o Karuppu Kavuni Rice - 1 Cup
o Water - 4 Cups
o Jaggery - ¾ Cup
o Grated Coconut - ½ Cup
o Cardamom - ¼ tspn

Preparation:
• Wash the rice and soak it for 6-8 hours
• Add three cups of water inclusive of the soaked water and pressure cook it for ½ hour in sim
• Check if rice is cooked and add Jaggery & Grated coconut and mix it well
• Add cardamom and ghee and serve it hot.
